Caramel lovers, you’ve got to try this Brown Sugar Caramel Souffle!!

For some reason, fall brings in a yearning for caramel. With apples and popcorn, it is a standard; but have you ever had a Caramel Souffle? We just tried this quick recipe for a week-night dessert; what a treat that was!!IMG_4890

This recipe from Bon Appetit produces a delectable dessert that every caramel lover will have to add to their repertoire. SWEETTABLESCAPES did!!

Brown Sugar Caramel Soufflés

You’ll need:

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup (packed) plus 2 tablespoons dark brown sugar, plus additional for sprinkling
  • 1/2 cup whipping cream
  • 3/4 teaspoon vanilla extract
  • 1/4 teaspoon (scant) salt
  • 3 large egg yolks
  • 2 tablespoons all purpose flour
  • 6 large egg whites

Directions:

  • Preheat oven to 400°F. Butter eight 3/4-cup soufflé dishes; sprinkle with brown sugar. Place on rimmed baking sheet. IMG_4877
  • Melt butter in heavy medium saucepan over medium heat; add 1 cup brown sugar, cream, vanilla, and salt; IMG_4878stir until sugar dissolves. Cool slightly. Pour 1/2 cup caramel into small bowl; reserve for sauce.IMG_4879
  • Add egg yolks and flour to remaining caramel in saucepan; IMG_4880whisk constantly over medium heat until mixture thickens, about 3 minutes. Cool 15 minutes.IMG_4885
  • Using electric mixer, beat egg whites in large bowl until foamy, then gradually beat in 2 tablespoons brown sugar until whites are stiff but not dry. IMG_4881IMG_4883Fold 1/3 of whites into caramel mixture in saucepan. IMG_4884Fold caramel mixture into whites until incorporated. IMG_4886Divide mixture among prepared dishes. IMG_4888Sprinkle lightly with brown sugar. Bake until soufflés are puffed and golden brown, about 11 minutes.
