Apple Crumb Cake: a perfect fall dessert!

Yep, I know, another apple-based recipe! But what do you expect this time of year? Apple picking is a ritual in the fall, a family’s favorite past time and you’ve got to do something with all these apples. Granted, this recipe only requires 2 or 3 apples but SWEETTABLESCAPES declares it a winner nonetheless. It’s made it to our tables at least 4 times in the last month and it is sure to become a classic in your autumn repertoire!! It’s just too easy and tasty!! This recipe is from Crunchy Creamy Sweet.

IMG_0023You’ll need:
for the cake:
    1. 3/4 cup all-purpose flour
    2. 1/4 cup granulated sugar
    3. 1 teaspoon baking powder
    4. 3/4 teaspoon ground cinnamon
    5. 1/8 teaspoon baking soda
    6. 1/8 teaspoon salt
    7. 1/4 cup + 2 Tablespoons of milk
    8. 3/4 teaspoon pure vanilla extract
    9. 1/4 cup + 2 teaspoons vegetable or canola oil
    10. 1 large egg
    11. 2 or 3 medium apples, washed, peeled, cored and sliced ( I used Red Delicious and Golden Delicious)
    12. 2 Tablespoons granulated sugar
    13. 1/2 teaspoons ground cinnamon
    14. 1 Tablespoon apple cider vinegar
for the topping:
  1. 1/3 cup packed light brown sugar
  2. 1/3 cup granulated sugar
  3. 1 teaspoon ground cinnamon
  4. 1/2 teaspoon salt
  5. 1/2 cup unsalted butter, melted and cooled
  6. 1 and 1/2 cup all-purpose flour
    1. Grease and flour an 8″ round springform pan. Set aside.IMG_0015
    2. Preheat oven to 375 degrees F.
to make the topping:
    1. In a medium bowl, whisk together both sugars, cinnamon, salt and flour.IMG_0009 Add melted butter and fluff with fork until mixtures creates crumbs. Set aside.IMG_0010IMG_0011
    2. In a medium bowl, toss together apple slices with two tablespoons of sugar, 1/2 teaspoon of cinnamon and the apple cider vinegar. Set aside.IMG_0016
to make the cake:
  1. In a medium mixing bowl, whisk together flour, sugar, baking powder, cinnamon, baking soda and salt. IMG_0012In a large measuring cup, mix together milk, vanilla, oil and egg. Whisk until smooth.IMG_0013
  2. Add the wet ingredients to the dry ingredients and stir with a wooden spoon. Do not over mix. Few lumps in the batter are okay.IMG_0014
  3. Pour the cake batter into the prepared pan.
  4. Arrange apple slices over the batter.IMG_0017
  5. Sprinkle crumb topping over the apples covering completely.IMG_0018
  6. Bake the cake for 30 to 35 minutes or until the topping is golden brown.
  7. Let cool completely in the pan.
  8. Transfer onto a serving plate or stand. Slice and serve.
  9. Keep in a covered container for up to 4 days.IMG_0024
