Apple Cider and Cinnamon Little Cakes

Always trying new recipes with seasonal appeal, SWEETTABLESCAPES also wanted to use these paper baking cups you see everywhere these days. Sturdier that cupcake liners, they can support your batter without actually being in a cupcake or muffin pan and do not loose their color once in contact with the grease of the batter.
APPLE CIDER AND CINNAMON LITTLE CAKES:
2 eggs and 3 yolks
50 g flour
15 g cornmeal
25g granulated sugar
100g confectioner’s sugar
1 TBsp ground cinnamon
15 cl cider
100 g salted butter (cut in pieces)
Preheat oven to 400F
In a large bowl, whisk eggs and two remaining egg yolks. Add confectioner’s sugar and flour gradually. Mix thoroughly.
Let cool and serve.
