Apple Cider and Cinnamon Little Cakes

Always trying new recipes with seasonal appeal, SWEETTABLESCAPES also wanted to use these paper baking cups you see everywhere these days. Sturdier that cupcake liners, they can support your batter without actually being in a cupcake or muffin pan and do not loose their color once in contact with the grease of the batter.

So we searched for a small cake recipe in our French baking “library” IMG_4980and came upon these:

APPLE CIDER AND CINNAMON LITTLE CAKES:

They are VERY cinnamony but very soft and chewy. Definitely a fall dessert!!IMG_4923

You’ll need:

2 eggs and 3 yolks

50 g flour

15 g cornmeal

25g granulated sugar

100g confectioner’s sugar

1 TBsp ground cinnamon

15 cl cider

100 g salted butter (cut in pieces)

Directions:

Preheat oven to 400F

In a bowl, whisk one egg yolk with granulated sugar until light; add cornmeal, cinnamon and cider. Mix well.IMG_4909IMG_4910IMG_4911

Pour this mixture in a small saucepan and heat slowly, over low heat, for about 5 minutes, until thickened. Add butter. Reserve.IMG_4912IMG_4914

In a large bowl, whisk eggs and two remaining egg yolks. Add confectioner’s sugar and flour gradually. Mix thoroughly.

Add content of saucepan to the bowl and mix.IMG_4920IMG_4921

Pour into buttered, individual pans (or paper cups)IMG_4922

Bake for 10 to 12 minutes.IMG_4924

Let cool and serve.
