Here at SWEETTABLESCAPES, we often have requests for recipes that will accommodate specific dietary requirements. Recently, a diabetic client wanted sugar free cookies and we went straight to this book: Baking with Agave Nectar.
Here is one of the recipes which also happens to be vegan.
1 cup whole wheat pastry flour
1/2 cup arrowroot powder
1 tsp baking powder
1/2 tsp sea salt
6 TBsp canola oil
2 TBsp vanilla extract
1/2 cup light agave nectar
Preheat oven to 350F and line 2 baking sheets with parchment paper.
In a bowl, mix together flour, arrowroot powder, baking powder and salt. In a separate bowl, combine canola oil, vanilla extract and agave nectar, and whisk together thoroughly. Combine the 2 mixtures until juts blended. Drop batter by the teaspoonful onto the preared baking sheets.
Bake for 7 minutes or until slightly golden. Do not overbake.
Let cool on the baking sheet for 5 minutes and transfer to cooling rack to cool completely. These cookies crisp up after cooling.
