Mini Spice Cakes

We’re all the same. We get a new toy and it becomes our favorite until a new acquisition takes its place. Right now at SWEETTABLESCAPES we are in love with our new mini bundt cake pan. It just produces the cutest little cakes…

We got the inspiration here and could not wait to try what is truly a delicious treat.

You’ll need:

1 1/2 stick butter at room temperature

1 1/2 cups packed brown sugar

1/4 tsp nutmeg

3/4 tsp cinnamon

1/2 tsp allspice

1/4 ginger

1/2 tsp salt

1/2 tsp baking powder

3 eggs

2 cups all-purpose flour

3/4 cup orange juice



Preheat oven to 350F

Beat butter and sugar until well blended.

Add salt, spices and baking powder to the flour

Beat in the eggs one at a time into the butter/sugar mixture until well blended

Add flour to the mixture a little bit at a time alternating with orange juice.

Butter cake pan. Fill with batter.

Bake until toothpick comes out clean, about 20 minutes for mini pan, about 30 minutes for a regular size bundt cake pan.

Sprinkle with powdered sugar as a finishing touch. (We added Easter eggs to create a “nest”. Use edible grass to make it even more realistic)
