Chinese New Year: have a (fortune) cookie!!

One of our favorite things to do here at SWEETTABLESCAPES is to explore and discover…all in the safety of our own kitchen!!

Since January 23 will be the beginning of the year of the Dragon, we thought it would be fun to try and make some fortune cookies….

It is a very basic recipe, the trouble is in shaping the cookies successfully and very quickly since they harden fast after being taken out of the oven.

You’ll need:

1 egg white

1/8 tsp vanilla extract

1 pinch salt

1/4 cup all purpose flour

1/4 cup sugar

Preheat oven to 400F. Generously grease a cookie sheet. (write your own fortunes on strips of parchment paper about 3 inches long and 1/2 inch wide.

Mix egg white and vanilla until foamy but not stiff. Add flour, salt and sugar to egg mixture and blend well. You’ll have a very runny batter.

Place teaspoonfuls of batter (2 a t a time is enough unless you’re a pro at this…again , cookies harden VERY quickly once out of the oven) at least 4 inches apart on prepared cookie sheet.

Bake for 5 minutes or until cookie has turned golden brown at the edge. The center will remain pale.

Remove from oven and quickly remove cookies from sheet with spatula. Place upside down on a wooden board. Place fortune inside and fold in half. Place the folded edge across the rim of a measuring cup and pull pointed edges down to shape cookie.

Place cookie into the cups of a muffin tin or egg carton to hold their shape until firm.
