More apples in our basket!!

We’re on a roll!! Autumn is apple season and there is no avoiding this delicious, filling, fiber-rich fruit! It’s at the top of SWEETTABLESCAPES‘ ingredient list.

Today, we’re baking Spice Apple Pie Cupcakes : (recipe from this book) and since we had fresh applesauce from the other day, we also made some Apple Butter (recipe in this book)

Spice Apple Pie Cupcakes:

3 1/2 Tbsp butter, softened

1/3 cup raw brown sugar

1 egg, lightly beaten

heaping 1 cup all-purpose flour

1 1/2 tsp baking powder

1/2 tsp apple pie spice

1 large baking apple, peeled, cored and finely chopped

1 Tbsp orange juice

Topping:

5 Tbsp all-purpose flour

1/2 tsp apple pie spice

2 Tbsp butter

1/4 cup superfine sugar

Preheat oven to 350F and line 12-hole muffin pan with paper liners.

To make topping, place flour, apple pie spice, butter and sugar in a large bowl and rub in with your fingers until mixture resembles fine breadcrumbs. Set aside.

To make cupcakes, place butter and sugar in a large bowl and beat together until light anf fluffy; then gradually beat in the egg. Mix flour, baking powder and apple pie spice and fold into the mixture, then add chopped apple and orange juice.

Spoon the batter into paper liners. Add the topping to cover each cupcake and press down gently.

Bake for 30 minutes or until golden brown. Serve warm.

Apple Butter:

If like us, you make lots of fresh applesauce with your aplle harvest, you can easily make some delicious apple butter.

In a heavy saucepan, combine:

4 cups unsweetened applesauce, 1 1/2 cups packed dark brown sugar, 1 tsp cinnamon, 1/4 tsp allspice, a pinch of ground cloves and the juice and grated rind of 1 lemon.

Cook over low heat for approximately 4 hours, until mixture is thick and dark brown. Take care not to scorch. Remove from the stove and let cool.

Put in a pretty jar with a fabric top and ribbon. Make your friends happy!!
