Mini Rum Baba

It is still summer for a while and SWEETTABLESCAPES is enjoying a few more lazy days before a full-blown back-to-school marathon hits us all.

To bake and take it easy at the same time, we often resort to this oh- so -simple Rum Baba recipe. Maybe not as sophisticated as others but so quick, and when soaked with rum, it’s all good!!!

You need:

3 eggs

3/4 cup sugar

1 cup flour

1 tsp baking powder

Mix all ingredients until you have a smooth and thick dough. Pour into you buttered pan and bake at 350 for 20 minutes.

While cake is baking, prepare the rum syrup: 2/3 cup water, 2/3 cup rum and 1/2 cup sugar. Heat until sugar dissolves and pour onto cake. It looks like a lot of liquid put it will be absorbed…

Make some whipped cream, top your cake with it and decorate with candied cherries. There is your delicious grown-up dessert!
