How about some Cheesecake?

SWEETTABLESCAPES  loves apples and pumpkin pie and all the autumn staples as much as everyone else …but today we feel like something creamy and decadent, something rich and smooth..How about some cheesecake?

It’s been a while, but I pulled up my mother-in-law’s recipe and…

You’ll need :

– 2 x 8oz cream cheese

– 1 lb ricotta cheese

-1 cup sugar

– 2 tsp vanilla

– 4 eggs

– 1/2 tsp lemon juice

– 1 Tbsp flour

– 1 TBsp cornstarch

-1/4 lb melted butter

– 1 pint sour cream

Warm up oven at 325 F. Grease a springform pan with butter. Beat all ingredients together and pour into pan. Bake for 1 hour. Turn off heat and open oven door. Let cake stand in oven for one hour. The top of the cake will crack. It’s normal.

You can top it off with any fruit filling or sprinkle with confectioner’s sugar. Eat while still warm and smooth or refrigerate for a firmer cake.
